What are the differences between the different types of coffee; medium, dark, ultra dark, espresso, etc?

I need to know ALL about coffee…medium, medium-dark, ultra dark, espresso, how coffee tastes from Africa vs Asia vs Islands vs South America, etc, I need all the information I can get! Thanks!

- differences between the different types of coffee -

Medium, dark, ultra dark, espresso, etc. is not a type of coffee, but just an indicator of what extent have the coffee been roasted. And roasters decide how long to roast depending on the beans they are roasting.

Different beans have different characteristics, and a good roaster can identify it and manipulate the roasting temperature and length.

In a nutshell, lighter roasting enhance the acidity and subtle estate specific flavors of the coffee, while darker roasting tend to have a stronger full body flavor.

-Africa vs Asia vs Islands vs South America, etc –

Coffee flavors differ depending on which estate they come from, so it will be impossible to categorize like Africa = citrusy, South America = chocolaty, etc.
Like a wine Somurie, if you want to really learn about coffee, you have to try as many coffees as you can from different estates.
