Friday, January 29th, 2010

Back when I was a kid there was this song on the radio that cought my fanzy.
Years later I tried to find it. I couldn’t I thought the title was “There’s A Awfull Lot Of Coffee In Brazil” and I thought a Girl had sung it. Then one day a few years ago I found the recording. It wasn’t a girl singer but Big Blue Eyes himself. The title wasn’t “There’s An Awfull Lot Of Coffee, But simply “THE COFFEE SONG”

What is the effect, in terms of flavor and chemistry, of over-extracting coffee, specifically espresso?

Thursday, January 28th, 2010

We have an illy pod espresso machine at work. Many of my colleagues brew a full-size cup of joe by running 6+ oz. of H20 through one pod. I try to discourage them from this practice, instinctively, but I was wondering if any coffee brewing experts could speak to bitter tasting alkaloids, etc. that might be promoted by making coffee in this way. Thanks!!!

Calorimetry in a totally insulating coffee cup?

Thursday, January 28th, 2010

A sample of Al (specific heat = 0.900-J/g°C) weighing 222.5-g is boiled in water at sea level until it reaches 100.0°C.
The sample is dumped into a coffee cup containing an unknown mass of water that had reached equilibrium temperature 20.3°C.
The temperature of the water and Al rose to 37.5°C.
Assuming that no heat is absorded by the coffee cup, what was the mass of the water in the coffee cup. (in grams)

Please use ALGEBRA!
Water specific heat or heat capacity: 4.182 J/g°C
Al specific heat: 0.900 J/g°C
Let the mass of water in the coffee cup Calorimeter be X grams.
(222.5g)*(0.900 J/g°C)*(100.0°C – 37.5°C) = (X g)*(4.182 J/g°C)*(37.5°C – 20.3°C)
X = (222.5*0.900*62.5)/(4.182*17.2)
= 174 (grams)

Is coffee or tea a big part of your life?

Thursday, January 28th, 2010

i guess some people could obsess over soda or energy drinks, but coffee and tea are so much more interesting, given how they are processed and the types and varieties of coffee and tea. Do you consider it a big part of your life?

must.have.coffee.

Yes, it’s a habit – I rely on it every morning to get my workday started. It’s a must-have when I’m playing scrabble or at a bookstore…

What do you like best about your favourite coffee shop?

Thursday, January 28th, 2010

I plan to open a coffee shop and would like to know what makes you call a coffee shop your favourite, and what makes you return. Thanks…

I have a few regular coffee shops.

The one at work
1. The coffee – cappuccino. They have a coffee brand I like.
2. They remember my order
3. They remember my name
4. There is a paper to read while I wait for my order

The one near the beach
1. The coffee – cappuccino. They have a cheese grinder, they grind chocolate on the top, not from a shaker
2. They make an excellent fruit salad that draws me back
3. They have papers and magazines to read while I eat in.

Things that drive me away from cafes.
1. if they look like they can’t make a good coffee (too junior a barista)
2. Nothing to read while I wait/eat

Good luck
